Everything on your menu is homemade and customized to your liking. I also like and whenever possible use mostly organic ingredients. While my specialty is good old fashioned home cooking, I can also make more upscale menu items as well. I love to incorporate unexpected pairings in my meals and have discovered many flavors that work well together. I also offer a variety of ethnic cuisines with my own “Delish” touch to it. Below is a sampling of some meal ideas.
Beefalo Meatloaf with Smashed Red Potatoes~ My meatloaf is somewhat famous and is the all time best comfort food. Beefalo is a mix of buffalo and beef. A very healthy meat with lean protein and great Omega 3′s you don’t have to worry about missing the flavor. This is stocked with it. I use peppers, onions, and special seasonings to hold this one together. Topped with ketchup it comes out of the oven moist and delicious! Smashed potatoes are a bit chunky but keep the tastebuds thrilled. Mixed with simple butter and salt and pepper.
Cheesy Creamy Chicken Enchiladas with Pico De Gallo~Shredded chicken breast that’s been roasted in a wonderful blend of mexican spices. Mixed with chopped tomatillos in a creamy chicken and sour cream sauce. Rolled in whole wheat tortillas and topped with more sauce and shredded cheddar cheese. Have some chips and Pico on hand and you’re ready for a fiesta in your mouth.
Pulled BBQ Pork with Krisp Koleslaw~ Normally pulled pork takes 8-10 hours, but I have a secret way to make it faster. This turns out juicy and perfectly tasting of garlic and thyme. Topped with the best homemade BBQ sauce you’ve ever had. Put the coleslaw on your sandwich or leave on the side and this is the perfect summertime meal.
Parmesan Crusted Chicken Breast with Creamy Pea Orzo~ Thin chicken breast coated with a panko parmesan breading. Juicy and savory with a lighter feel but still yummy enough the kids will love it! The perfect mate, orzo pasta with a simple bechamel sauce mixed with peas. All of the flavor comes from the nutmeg and lemon in the sauce. A tasty treat. I also like using this chicken recipe for chicken parmesan and chicken strips!
